    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open or damaged.

    Cook the Sausage

    In a large pot, heat olive oil over medium heat. Add the andouille sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.

    Sauté the Aromatics

    In the same pot, add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute.

    Make the Tomato Broth

    Add the canned diced tomatoes (with juices) and chicken broth to the pot. Stir in cayenne pepper, salt, and black pepper. Bring to a simmer.

    Add the Mussels

    Return the andouille sausage to the pot and add the mussels. Cover and cook for 5-7 minutes, or until the mussels have opened.

    Finish and Serve

    Stir in chopped parsley, adjust seasoning if necessary, and serve hot with grilled bread on the side.
