    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion and celery, then sauté until soft, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

    Add Tomato Paste and Wine

    Stir in the tomato paste and pour in the dry white wine. Bring to a simmer and let it reduce by half, about 10 minutes.

    Combine Stock and Seasonings

    Add the seafood stock, bay leaves, and fresh thyme to the pot. Season with salt and black pepper to taste. Bring to a boil, then reduce heat and let it simmer for 20 minutes.

    Incorporate Seafood

    Add the shrimp, scallops, and crab meat to the pot. Let it simmer for another 5-7 minutes until the seafood is cooked through.

    Finish with Cream

    Stir in the heavy cream and let the bisque heat through without boiling. Remove bay leaves before serving.

    Garnish and Serve

    Ladle the bisque into bowls, garnish with chopped parsley, and serve hot.
