Sweet Potato Fries

Preparation

    Prepare House Fries

    Peel and cut the russet potatoes into evenly sized fries. Soak them in cold water for at least 30 minutes, then drain and pat dry.

    Fry House Fries

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels, then season with salt and pepper.

    Prepare Sweet Potato Fries

    Peel and cut the sweet potatoes into irregular fries. Toss them with olive oil, salt, and cayenne pepper.

    Bake Sweet Potato Fries

    Spread sweet potato fries on a baking sheet and bake in a preheated oven at 425°F (220°C) for about 25-30 minutes, flipping halfway through, until crispy.

Assembly

    Make Truffled Fries

    Toss the prepared house fries in truffle oil and sprinkle with grated Parmesan cheese and chopped parsley.

    Serve

    Plate the house fries, truffled fries, and sweet potato fries together. Enjoy your Flight O' Fries!
