Our cauliflower crust is topped with house-marinara and our street-corn medley for a simple, healthy and, most importantly, delicious flatbread option for our vegan friends!

Making the Cauliflower Crust

Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Steam the cauliflower florets until tender, about 5-7 minutes. Drain well and let cool.

Blend the Cauliflower
Once cooled, place the cauliflower in a food processor and pulse until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.

Mix the Ingredients
In a large bowl, combine the cauliflower rice, almond flour, nutritional yeast, ground flaxseed, olive oil, garlic powder, salt, and black pepper. Mix well until it forms a dough.

Shape the Crust
Line a baking sheet with parchment paper. Spread the dough into a round shape, about 1/4 inch thick.

Bake the Crust
Bake in the preheated oven for 25-30 minutes, or until golden brown and firm.
Topping the Cauliflower Crust

Prepare the Topping
In a bowl, combine corn kernels, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and season with salt and pepper to taste.

Assemble the Flatbread
Spread the house-marinara sauce evenly over the baked cauliflower crust, then top with the street-corn medley.

Final Bake
Return to the oven and bake for an additional 10-15 minutes until everything is heated through.

Remove from oven, let cool slightly, slice, and serve warm.
