Prepare the Ingredients
Slice the fresh mozzarella into 1/2 inch discs and the NJ tomatoes into similar thickness.

Layer the Caprese Tower
On a serving plate, place one mozzarella disc, followed by a slice of tomato. Sprinkle the tomato with garlic pepper, salt, and black pepper.

Repeat the Layers
Continue layering the mozzarella and tomato slices, alternating between them, until all ingredients are used. Aim for at least three layers.

Drizzle and Garnish
Drizzle the tower with extra virgin olive oil and fig-balsamic glaze. Top with fresh basil leaves for garnish.

Serve immediately as an appetizer or salad.
