Prepare the Topping
Chop the fresh tomatoes and basil leaves into small pieces and place them in a mixing bowl. Mince the garlic cloves and add them to the bowl.

Drizzle the extra virgin olive oil and balsamic vinegar over the tomato mixture. Season with salt and black pepper. Gently mix everything together until well combined.

Toast the Bread
Preheat the oven to 400°F (200°C). Slice a baguette or Italian bread into 1/2 inch thick slices. Arrange the slices on a baking sheet and brush lightly with olive oil.

Toast in the oven for about 5-7 minutes or until golden brown and crispy.

Assemble the Bruschetta
Remove the toasted bread from the oven and let it cool for a minute. Spoon the tomato mixture generously onto each piece of toasted bread.
