1. Prepare the Loaded Potato Skins

Preheat the oven to 400°F (200°C). Wash and scrub the russet potatoes, then prick them with a fork. Bake for 45-60 minutes until tender. Once cool, cut potatoes in half and scoop out some flesh. Heat oil in a deep skillet over medium-high heat. Fry mozzarella sticks until golden brown, about 2-3 minutes. Drain on paper towels and serve hot.
