Chicken Kebab
1. Prepare the Chicken Marinade
In a large mixing bowl, combine plain yogurt, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and olive oil. Mix well to form a marinade.
2. Marinate the Chicken
Cut boneless, skinless chicken thighs into 1-inch cubes. Add the chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
3. Skewer and Grill
Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto skewers. Grill for 4–5 minutes on each side until the chicken is cooked through and has a nice char. Remove from heat and let rest for a few minutes.
Lamb Kofta
4. Make the Kofta Mixture
In a large bowl, combine ground lamb, finely chopped onion, minced garlic, chopped fresh parsley, ground cumin, ground coriander, ground cinnamon, cayenne pepper, salt, and black pepper. Mix thoroughly until well combined.
5. Shape the Kofta
With damp hands, take a handful of the lamb mixture and shape it into oval cylinders or around skewers. Repeat with the remaining mixture.
6. Grill the Kofta
Preheat a grill or grill pan over medium-high heat. Grill the kofta for 3–4 minutes per side until browned and cooked through. Remove from heat and let rest.

8. Prepare the Bulgur
Place fine bulgur wheat in a bowl and cover with hot water. Let soak for 20 minutes, then drain and fluff with a fork.
9. Assemble the Salad
In a large bowl, combine chopped parsley, chopped mint, diced tomato, diced cucumber, chopped green onion, soaked bulgur, lemon juice, olive oil, and salt. Toss until well mixed and refrigerate until ready to serve.
