Prepare the Dough

Mix Dry Ingredients

In a large bowl, combine flour and salt.

Gradually add water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.

Make the Filling

In a skillet, heat olive oil over medium heat. Add chopped leeks, salt, and pepper. Cook until leeks are soft, about 5-7 minutes. Let cool.

Prepare the Meat Sauce

Cook Onions and Garlic

In a large pan, sauté chopped onion and garlic until translucent.

Add ground meat, cook until browned. Stir in tomato paste, cumin, salt, and pepper. Add water and simmer for 20 minutes.

Make Yogurt Sauce

In a bowl, mix yogurt, minced garlic, salt, and chopped mint. Adjust seasoning to taste.

Form and Cook Dumplings

Shape the Dumplings

Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a cookie cutter.

Place a teaspoon of leek filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges.

Bring a large pot of salted water to a boil. Cook the dumplings in batches for 5-7 minutes until they float. Remove with a slotted spoon.

Serve

Place dumplings on a plate, top with meat sauce and a dollop of yogurt sauce. Serve warm.
