1. Prepare the Meatballs

In a large bowl, combine ground beef, minced garlic, Italian seasoning, salt, and black pepper. Form into small meatballs and set aside.

2. Cook the Sausage

In a skillet, cook the Italian sausage until browned. Remove from skillet and slice into bite-sized pieces.

3. Prepare the Eggplant Rollatini

Slice the eggplants lengthwise into thin sheets. Brush with olive oil and grill or bake until slightly soft. Spread ricotta cheese mixed with egg, salt, and pepper on each slice and roll them up.

4. Cook the Pasta

Cook the spaghetti or preferred pasta according to package instructions. Drain and set aside.

5. Assemble the Dish

In a large baking dish, spread a layer of marinara sauce. Place the meatballs, sausage pieces, and eggplant rollatini on top. Cover with remaining marinara sauce and sprinkle mozzarella and Parmesan cheese on top.

6. Bake

Preheat the oven to 180°C (350°F) and bake for 25-30 minutes until the cheese is melted and bubbly.

7. Serve

Serve the Tour of Rosalina's hot over a bed of pasta, garnished with fresh herbs if desired.
