Preparation
Make the Pasta Dough
In a large bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Prepare the Cheese Filling
In a mixing bowl, combine ricotta, mozzarella, parmesan, egg yolk, salt, pepper, and nutmeg. Mix well until smooth and set aside.
Roll out the Dough
Divide the dough into four pieces. Roll each piece out to about 1/16 inch thick using a pasta machine or rolling pin. Cut into squares or circles, depending on your preferred ravioli shape.
Fill the Ravioli
Place a teaspoon of the cheese filling in the center of each dough piece. Moisten the edges with water and fold over to seal, pressing out any air pockets. Crimp the edges with a fork to secure.
Cook the Ravioli
Bring a large pot of salted water to a boil. Add ravioli and cook for 4-5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
Serve
Serve the cooked ravioli in bowls topped with the homemade tomato sauce. Garnish with additional parmesan and fresh basil if desired.
