Cooking Instructions
Prepare the Chicken or Veal
Season the chicken breasts or veal cutlets with salt and black pepper. Dredge them in flour, shaking off any excess.
Sauté the Meat
In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken or veal and sauté until golden brown on both sides, about 4-5 minutes per side. Remove from skillet and set aside.
Make the Sauce
Add minced garlic to the skillet with the mushrooms and cook for 1 minute. Pour in the Marsala wine and scrape the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes until slightly reduced.
Finish the Dish
Add the chicken broth and return the chicken or veal to the skillet. Simmer for an additional 5-7 minutes, until the meat is cooked through and the sauce thickens slightly.
Serve
Garnish with fresh parsley and serve hot with your choice of sides.
