Cooking Directions
Prepare the Haddock
Preheat the oven to 375°F (190°C). Rinse the haddock fillets and pat them dry with paper towels. Place the fillets in a greased baking dish.
Sauté the Spinach
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and sauté until wilted. Remove from heat.
Assemble the Topping
In a bowl, mix together the sautéed spinach, roasted red peppers, diced tomatoes, crumbled feta cheese, lemon juice, salt, and black pepper.
Top the Haddock
Spread the prepared topping evenly over the haddock fillets in the baking dish.
Bake the Haddock
Drizzle the remaining tablespoon of olive oil over the top. Bake in the preheated oven for about 20-25 minutes, or until the haddock is cooked through and flakes easily with a fork.
Serve
Remove from the oven and let it rest for a few minutes before serving. Enjoy your Haddock Margherita!
