Shrimp Parmigiana

Prepare the Penne Pasta
Cook the penne pasta according to package instructions. Drain and set aside.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Bread the Shrimp
In a shallow dish, combine flour, salt, black pepper, and garlic powder. In another dish, place the beaten eggs. In a third dish, combine breadcrumbs and grated Parmesan cheese. Dredge each shrimp in the flour mixture, dip in the egg, then coat with the breadcrumb mixture.

Fry the Shrimp
In a large skillet, heat olive oil over medium heat. Fry the breaded shrimp in batches until golden brown, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Assemble the Dish
In a baking dish, spread a layer of tomato sauce. Place the fried shrimp on top, then add more tomato sauce over the shrimp. Sprinkle the shredded mozzarella cheese on top.

Bake
Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.

Serve
Toss the cooked penne pasta with remaining tomato sauce and serve alongside the Shrimp Parmigiana.
