Prepare the Potatoes

Preheat your oven to 400°F (200°C). Toss the diced potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast in the oven for about 25-30 minutes until golden and tender.

Cook the Chicken

In a skillet, heat the remaining olive oil over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side until cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then add the diced Roma tomatoes and chicken broth. Let it simmer for about 5-7 minutes until the tomatoes soften. Stir in the chopped basil.

Return the cooked chicken to the skillet, spooning the sauce over the top. Allow it to heat through for a couple of minutes. Serve the chicken over the roasted potatoes and drizzle with extra sauce if desired.
