For the Roasted Salmon

Preheat the Oven
Preheat your oven to 400°F (200°C).

Roast the Salmon
Place the salmon fillets on a baking sheet lined with parchment paper and roast for about 12-15 minutes, or until cooked through.
For the Roasted Garlic Mash

Prepare the Potatoes
Peel and chop the potatoes into chunks. Boil them in salted water until tender (about 15-20 minutes).

Roast the Garlic
While the potatoes are boiling, roast the garlic cloves in a small pan with a bit of olive oil for about 10 minutes until golden and fragrant.

Mash the Potatoes
Drain the potatoes, then mash them with the roasted garlic, butter, heavy cream, salt, and black pepper until smooth and creamy.
For the Seasonal Vegetables

Prepare the Vegetables
Chop the zucchini, bell pepper, and carrots into bite-sized pieces.

Roast the Vegetables
Toss the vegetables with olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for about 20 minutes, or until tender.
