Brownie and Peanut Butter Mousse

Method

Preparation

  1. 1

    Make the Brownies

Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.

  2. 2

In a medium saucepan, melt the butter over low heat. Remove from heat and stir in granulated sugar and brown sugar until combined.

  3. 3

Add eggs one at a time, mixing well after each addition. Stir in vanilla.

  4. 4

In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually add to the butter mixture and stir until just combined.

  5. 5

Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs. Allow to cool in the pan.

  6. 6

    Make the Peanut Butter Mousse

In a mixing bowl, beat the heavy cream until soft peaks form.

  7. 7

In another bowl, mix the peanut butter and powdered sugar until smooth. Gently fold in the whipped cream until fully combined.

  8. 8

Spread the peanut butter mousse over the cooled brownies and freeze for at least 1 hour.

  9. 9

    Serve

Cut the brownies into squares, drizzle with caramel and chocolate sauce before serving.
