Cook the Pasta
In a large pot of salted boiling water, cook manicotti pasta according to package instructions until al dente. Drain and set aside to cool slightly.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until well combined.

Stuff the Manicotti
Using a piping bag or a spoon, carefully fill each manicotti shell with the ricotta mixture.

Assemble the Dish
Preheat the oven to 375°F (190°C). Spread 1 cup of tomato sauce in the bottom of a 9x13 inch baking dish. Arrange the stuffed manicotti on top of the sauce. Pour the remaining tomato sauce over the manicotti and sprinkle with the remaining mozzarella cheese and Italian seasoning.

Bake
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Let the manicotti cool for a few minutes before serving. Enjoy!
