    Cook the Pasta

    In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt butter over medium heat. Stir in flour and cook, stirring constantly, for about 1 minute until lightly golden. Gradually whisk in milk and bring to a simmer, stirring until thickened.

    Add Cheese

    Remove the pot from heat and stir in the cheddar and Gruyère cheeses until melted and smooth. Season with salt and black pepper.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce and stir until evenly coated.

    Prepare for Baking

    Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish.

    Top with Breadcrumbs

    Sprinkle the breadcrumbs evenly over the top of the mac and cheese. Drizzle with white truffle oil.

    Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

    Allow to cool slightly before serving. Drizzle with additional white truffle oil if desired.
