    Prepare the Mozzarella

    In a pot, heat water until it almost boils. Tear the mozzarella cheese into smaller pieces and place them in the hot water for about 5 minutes, until they become soft and pliable. Remove from heat and stretch the cheese until smooth.

    Prepare the Tomatoes

    Wash the tomatoes and slice them into thick rounds. Set aside.

    Make the Roasted Garlic

    If you haven't roasted garlic yet, preheat the oven to 200°C (400°F). Wrap the garlic cloves in aluminum foil and roast for about 30 minutes until soft. Once cool, squeeze the roasted garlic from the skins.

    Assemble the Caprese

    On a serving platter, alternate layers of mozzarella, tomato slices, and basil leaves. Drizzle with olive oil and balsamic vinegar. Add roasted garlic cloves on top, and season with salt and black pepper.
