Prepare the Crust
Preheat the oven to 325°F (163°C). In a medium bowl, mix together graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the sugar and beat until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing on low speed until just combined after each addition.

Combine and Bake
Pour the cheesecake filling into the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool slowly.

Chill and Serve
Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving. Remove from the springform pan, slice, and enjoy!
