Gelato Preparation

    Make the Base

    In a saucepan, combine the whole milk, heavy cream, and half of the sugar. Heat over medium heat until just simmering.

    Whisk the Yolks

    In a bowl, whisk together the egg yolks and remaining sugar until pale and thick.

    Temper the Eggs

    Slowly pour the hot milk mixture into the egg yolks, whisking constantly to prevent curdling.

    Thicken the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon.

    Cool and Flavor

    Remove from heat, stir in vanilla extract and salt. Let it cool completely. Divide the base into separate bowls for different flavors.

    Add Flavorings

    For chocolate gelato, add melted chocolate; for pistachio, add pistachio paste; for coffee, add brewed coffee; for mint, add mint extract; for brownie, fold in brownie pieces; for spumoni, add chopped candied fruits and nuts.

    Chill and Freeze

    Chill the flavored gelato bases in the refrigerator for at least 4 hours, then churn in an ice cream maker according to manufacturer's instructions.

    Serve

    Transfer the gelato to a container and freeze until firm. Serve in bowls or cones.
