Cooking Instructions

  1. 1

    Prepare the Chicken

Season the chicken breasts with salt and black pepper. Dredge each breast in flour, shaking off the excess.

  2. 2

    Cook the Chicken

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove from skillet and keep warm.

  3. 3

    Make the Sauce

In the same skillet, add the remaining olive oil and 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute. Add chicken broth, lemon juice, and capers, and bring to a simmer.

  4. 4

    Finish the Sauce

Reduce heat and let the sauce simmer for 5 minutes. Whisk in the remaining butter until melted and the sauce is smooth.

  5. 5

    Cook the Pasta

In the meantime, cook the penne pasta according to package instructions. Drain and set aside.

  6. 6

    Grill the Asparagus

Drizzle the asparagus with olive oil, salt, and pepper. Grill on medium heat for about 5-7 minutes until tender.

  7. 7

    Combine and Serve

Return the chicken to the skillet with the sauce and let it simmer for another 2 minutes. Serve the chicken over the penne pasta, topped with the lemon butter sauce and capers, alongside the grilled asparagus.
