Shell Preparation

Make the Dough
In a mixing bowl, combine all-purpose flour, sugar, and salt. Add softened butter and mix until crumbly. Stir in the egg and white wine (or vinegar) until a dough forms. Knead the dough for about 5 minutes until smooth.

Roll and Cut
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. After chilling, roll out the dough to about 1/8 inch thickness. Cut into circles (about 4 inches in diameter).

Shape the Shells
Wrap each circle around a cannoli mold, sealing the edges with a little water. Repeat with remaining dough.

Fry the Shells
Heat oil in a deep pan to 350°F (175°C). Fry the wrapped molds until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing the molds.

Prepare the Filling
In a bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth. Fold in the chocolate chips.

Fill the Shells
Using a pastry bag, fill each cooled cannoli shell with the ricotta filling.

Dust and Serve
Dust the filled cannoli with powdered sugar before serving.
