Prepare the Fish
In a bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Gradually add cold sparkling water to make a batter. It should be thick enough to coat the fish.
Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Fish
Dip each fish fillet into the batter, allowing any excess to drip off. Carefully place them in the hot oil and fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
Make the Salad
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, radishes, and red onion. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad and toss to combine.
