Prepare the Caramel

In a medium saucepan, combine brown sugar and 1 cup of water. Cook over medium heat, stirring until the sugar dissolves. Increase heat and bring to a boil. Allow to boil without stirring until it turns a deep amber color, about 8-10 minutes.

Mix the Cream and Milk

In a separate saucepan, combine heavy cream, whole milk, and a pinch of salt. Heat over low heat until warm but not boiling.

Combine Caramel and Cream

Once the caramel reaches the desired color, remove it from heat. Slowly whisk in the warm cream mixture. Be cautious as it will bubble up. Stir until smooth.

Thicken the Mixture

In a bowl, whisk together egg yolks and cornstarch until smooth. Gradually whisk in the caramel mixture. Return to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes.

Finish the Budino

Remove from heat and stir in the butter and vanilla extract until fully incorporated. Pour the mixture into individual serving cups and refrigerate for at least 4 hours or until set.
