Chopped Steak with Foie Gras and Red Wine Sauce

    Prepare the Chopped Steak

    In a mixing bowl, combine ground beef, salt, and black pepper. Form the mixture into two equal patties.

    Cook the Patties

    In a skillet, heat olive oil over medium-high heat. Add the patties and cook for about 4-5 minutes on each side for medium doneness, or until preferred doneness is achieved. Remove from skillet and set aside.

    Sear the Foie Gras

    In the same skillet, reduce the heat to medium and add the foie gras slices. Sear for about 1-2 minutes on each side until browned. Remove and set aside.

    Make the Red Wine Sauce

    In the same skillet, add minced garlic and sauté until fragrant. Pour in red wine and beef broth, scraping up any browned bits. Bring to a boil and reduce heat to simmer until the sauce thickens, about 10 minutes.

    Stir in butter and fresh thyme into the sauce. Adjust seasoning with salt and pepper if necessary.
