Prepare the Pork Chops
Season the Berkshire pork rib chops with salt, black pepper, and fresh thyme. Rub the seasoning into the meat evenly.
Sear the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until browned. Reduce the heat to medium and cook for an additional 5-7 minutes or until the internal temperature reaches 145°F (63°C). Remove from skillet and let rest.
Prepare the Mozzarella
While the pork is resting, slice the mozzarella cheese into thick slices.
Bread the Mozzarella
Set up a breading station with three shallow dishes: one with flour, one with a beaten egg, and one with breadcrumbs. Dip each mozzarella slice first in flour, then in egg, and finally coat with breadcrumbs.
Fry the Mozzarella
