    Roast the Mushrooms

    Preheat the oven to 400°F (200°C). Clean the portobello mushrooms and remove the stems. Drizzle with olive oil, sprinkle with chopped rosemary, salt, and black pepper. Place them on a baking sheet, gill side up, and roast for 25 minutes.

    Sauté the Onions

    While the mushrooms are roasting, slice the onion thinly. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 10-15 minutes.

    Prepare the Ciabatta

    Slice the ciabatta bread in half and lightly toast it in the oven for about 5 minutes or until golden brown.

    Assemble the Sandwich

    On the bottom half of the toasted ciabatta, layer the roasted portobello mushrooms, sautéed onions, a generous amount of goat cheese, and spring mix. Drizzle balsamic reduction over the top and place the other half of the ciabatta on top.

    Slice the sandwich in half and serve immediately while warm.
