    Prepare the Ingredients

    Chop the onion and crumble the chorizo. Set aside.

    Sauté the Chorizo and Onion

    In a skillet over medium heat, add the chorizo and onion. Cook until the chorizo is browned and the onion is translucent, about 5-7 minutes.

    Scramble the Eggs

    In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the chorizo and onions, and scramble until fully cooked, about 3-4 minutes.

    Assemble the Burrito

    Lay a spinach wrap flat and add a portion of the chorizo and egg mixture. Top with Monterey Jack cheese, salsa, and a dollop of sour cream.

    Roll the Burrito

    Fold in the sides of the wrap and then roll it up tightly from the bottom to the top. Repeat with the remaining wraps and filling.
