1. Prepare the Ingredients
Cook the bacon until crispy and crumble it. Shred the cooked chicken and prepare the coleslaw mix by tossing it with a little bit of Thousand Island dressing.
2. Assemble the Sandwich
On four slices of rye bread, layer the shredded chicken, crumbled bacon, Swiss cheese, red onion slices, coleslaw, and shredded lettuce. Drizzle additional Thousand Island dressing over the top, if desired.
3. Grill the Sandwich
Top each assembled sandwich with another slice of rye bread. Heat a skillet or griddle over medium heat. Butter the outside of each sandwich and grill them for about 3-5 minutes on each side, or until the bread is golden brown and the cheese is melted.
4. Serve
Remove the sandwiches from the skillet, slice in half, and serve warm with extra coleslaw or dressing on the side.
