1. Prepare the Crust
Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
2. Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition.
3. Pour and Bake
Pour the cheesecake filling over the prepared crust. Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.
4. Prepare the Praline Topping
While the cheesecake is baking, in a saucepan, combine pecans, brown sugar, and heavy cream. Cook over medium heat until the mixture thickens and becomes syrupy, about 5-7 minutes.
5. Add the Topping
Once the cheesecake is done, remove it from the oven and let it cool for about 10 minutes. Pour the pecan praline topping over the cheesecake and spread evenly.
6. Chill and Serve
Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
