Prepare the Tomatoes
Slice the green tomatoes into 1/2 inch thick slices. Sprinkle both sides lightly with salt and let sit for 10 minutes.
Prepare the Breading Stations
Set up three bowls: one with flour, one with buttermilk, and one with a mixture of cornmeal, salt, and black pepper.
Bread the Tomatoes
Dredge each tomato slice in flour, then dip into buttermilk, and finally coat in the cornmeal mixture. Place on a plate.
Fry the Tomatoes
In a large skillet, heat oil over medium-high heat. Fry the breaded tomato slices for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
Make the Vidalia Onion Relish
Finely chop the Vidalia onion and mix with a pinch of salt and pepper. Let it sit for 10 minutes to mellow the flavor.
Make the Sriracha Remoulade
In a bowl, combine mayonnaise and sriracha. Mix well and adjust the spice level to taste.
Plating
On a serving platter, layer the fried green tomatoes, top with crumbled goat cheese, spoon the Vidalia onion relish over, and drizzle with sriracha remoulade. Garnish with fresh parsley if desired.
