Prepare the Shrimp
Peel and devein the jumbo shrimp, leaving the tails on.

Batter the Shrimp
Dip the shrimp in the egg mixture, then coat with the flour mixture. Let sit for a few minutes.

Fry the Shrimp
In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Prepare the Fries
Cut the potatoes into strips and soak in cold water for 30 minutes. Drain and pat dry. Fry in hot oil until golden and crispy, about 4-5 minutes. Toss with sour cream and chopped chives.

Make the Coleslaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix mayonnaise, apple cider vinegar, and sugar. Pour over the cabbage mixture and toss to combine.

Serve
Serve the fried shrimp hot with the sour cream & chive fries, coleslaw, tartar sauce, and cocktail sauce on the side.
