Method

Steak Preparation

Season the Steak

Pat the New York strip steak dry with paper towels. Season generously with salt and black pepper on both sides.

Grill the Steak

Heat olive oil in a grill pan over medium-high heat. Add the steak and grill for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

Au Poivre Sauce Preparation

Make the Sauce

In the same pan used for the steak, melt butter over medium heat. Add minced shallots and cook until soft. Stir in crushed peppercorns, then add brandy, scraping the bottom of the pan. Allow to reduce for about 2 minutes, then stir in heavy cream. Simmer until slightly thickened, about 3-4 minutes.

Mashed Potatoes Preparation

Cook the Potatoes

In a large pot, boil water and add chopped potatoes. Cook until tender, about 15 minutes. Drain and return to pot.

Mash the Potatoes

Add butter, milk, and salt to the potatoes. Mash until smooth and creamy. Adjust seasoning to taste.

Asparagus Preparation

Steam the Asparagus

In a pot with a steamer basket, add water and bring to a boil. Place asparagus in the basket, cover, and steam for about 4-5 minutes until tender but still crisp. Drizzle with olive oil and sprinkle with salt.

Plating

Serve

Slice the rested steak and plate with mashed potatoes and steamed asparagus. Drizzle au poivre sauce over the steak before serving.
