    Prepare the Potatoes and Vegetables

    Preheat your oven to 425°F (220°C). Cut the potatoes into cubes and toss them with olive oil, salt, and pepper. Spread them on a baking sheet. In another bowl, toss the green beans and baby carrots with olive oil, minced garlic, salt, and pepper. Place them on a separate baking sheet.

    Roast the Potatoes and Vegetables

    Roast the potatoes in the oven for about 25 minutes, then add the green beans and baby carrots to the oven and roast everything for an additional 15-20 minutes, or until the vegetables are tender and slightly caramelized.

    Prepare the Pork Chops

    While the vegetables are roasting, season the pork chops with salt and black pepper on both sides. Brush the tops with a generous amount of pepper jelly.

    Grill the Pork Chops

    Preheat your grill to medium-high heat. Grill the pork chops for about 5-7 minutes on each side, brushing with more pepper jelly during the last few minutes of cooking, until they reach an internal temperature of 145°F (63°C).

    Plate the roasted potatoes, green beans, and carrots. Place the grilled pork chops on top and garnish with fresh rosemary sprigs.
