Prepare the Remoulade Sauce
In a bowl, mix together mayonnaise, Dijon mustard, chopped capers, pickle relish, lemon juice, hot sauce, paprika, salt, and black pepper. Adjust seasoning to taste. Set aside.

Cook the Flounder
Heat olive oil in a skillet over medium-high heat. Coat the flounder fillets with blackening seasoning on both sides. Place the fillets in the skillet and cook for about 3-4 minutes on each side until cooked through and slightly charred.

Assemble the Sandwich
Cut the sandwich rolls in half. Place lettuce leaves on the bottom half, followed by the cooked flounder, tomato slices, and a generous dollop of remoulade sauce. Top with the other half of the roll.
