    Prepare the Filet Mignon

    Season the filet mignon with salt and black pepper on both sides.

    Grill the Steak

    Heat olive oil in a grill pan over medium-high heat. Place the filet mignon on the grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let rest.

    Make the Madeira Sauce

    In the same pan, add minced garlic and sauté for 1 minute. Pour in Madeira wine and beef stock, scraping up any brown bits from the pan. Bring to a boil and reduce by half. Stir in butter and season with salt and pepper to taste.

    Prepare the Haricot Verts

    Blanch haricot verts in boiling water for 2-3 minutes until tender-crisp. Drain and season with salt and pepper.

    Serve

    Plate the mashed potatoes, top with the grilled filet mignon, drizzle with Madeira sauce, and serve with seasoned haricot verts. Garnish with chopped parsley.
