Prepare the Ingredients
Chop the onion, green bell pepper, and red bell pepper. Dice the ham into small pieces.

Whisk the Eggs
In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.

Cook the Vegetables
In a non-stick skillet, heat the olive oil or butter over medium heat. Add the chopped onion and bell peppers, sautéing until they are tender, about 3-4 minutes.

Add the Ham
Add the diced ham to the skillet and cook for an additional 2 minutes, stirring occasionally.

Add the Cheese
Sprinkle the shredded cheddar jack cheese evenly over the top of the omelet.

Finish Cooking
Using a spatula, gently fold one side of the omelet over the other. Continue cooking for another 1-2 minutes until the cheese has melted and the eggs are fully cooked.

Slide the omelet onto a plate, cut in half if desired, and serve hot.
