Prepare the Risotto
In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant.
Cooking the Risotto
Add the Arborio rice and stir for 1-2 minutes. Gradually add the chicken broth, one cup at a time, stirring continuously until absorbed. This should take about 18-20 minutes.
Finishing the Risotto
Once the rice is creamy and al dente, stir in the grated Parmesan cheese. Season with salt and pepper to taste. Keep warm.
Cook the Green Beans
In a separate pot, bring salted water to a boil. Add green beans and cook for 4-5 minutes until tender but crisp. Drain and set aside.
Prepare the Dill Sauce
In a small bowl, mix together the sour cream, chopped dill, lemon juice, and minced garlic. Season with salt and pepper to taste.
Cook the Salmon
In a skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season salmon fillets with salt and pepper. Cook for 4-5 minutes on each side, or until cooked through.
Plate the Dish
On each plate, serve a portion of creamy parmesan risotto topped with green beans, place the salmon fillet on top, and drizzle with the dill sauce.
