Cooking Directions

1

Marinate the Chicken

In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

2

Prepare the Tzatziki Sauce

In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Stir until well combined. Refrigerate until ready to serve.

3

Cook the Potatoes

Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and mash with a little butter and salt to taste.

4

Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken breasts for 6-7 minutes on each side, or until fully cooked and juices run clear.

5

Prepare the Green Beans

While the chicken is grilling, steam the green beans for about 5-7 minutes until tender-crisp.

6

Assemble the Dish

On each plate, serve a portion of mashed potatoes topped with grilled chicken. Drizzle with tzatziki sauce and add a side of steamed green beans.
