Bruschetta Topping

Method

Preparation

1

Prepare the Tomatoes

Dice the Roma tomatoes and place them in a mixing bowl.

2

Add the Marinade

Add balsamic vinegar, olive oil, salt, and black pepper to the tomatoes. Mix well.

3

Incorporate Other Ingredients

Finely chop the basil leaves, red onion, garlic, and capers. Add them to the tomato mixture along with the mixed herbs and parmesan cheese. Stir gently to combine.

4

Marinate

Let the mixture marinate for at least 15 minutes to allow the flavors to meld.

5

Prepare Crostini

While the bruschetta mixture is marinating, slice a baguette into 1/2 inch slices. Brush with olive oil and toast in the oven at 400°F (200°C) for about 5-7 minutes or until golden brown.

6

Serve

Spoon the bruschetta topping onto the toasted crostini and serve immediately.
