Prepare the Potatoes
Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

Prepare the Onion
Grate the onion and mix it with the grated potatoes in a large bowl.

Heat Oil
In a large frying pan, heat the vegetable oil over medium-high heat until shimmering.

Cook Latkes
Scoop about 1/4 cup of the latke mixture and carefully place it in the hot oil. Flatten it slightly with a spatula. Cook for about 3-4 minutes on each side or until golden brown and crispy. Repeat with the remaining mixture.

Drain
Once cooked, transfer the latkes to a paper towel-lined plate to drain excess oil.

Serve warm with applesauce and sour cream on the side.
