Prepare the Potato Mixture
Peel and grate the russet potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out excess moisture.

Mix Ingredients
In a large bowl, combine the grated potatoes and onion with flour, egg, salt, and black pepper. Mix until well combined.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Form and Cook Latkes
Using your hands, form the potato mixture into small patties. Carefully place them in the hot oil and cook for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Top
Transfer the cooked latkes to a paper towel-lined plate to drain excess oil. Once cooked, top with cheddar cheese, crumbled bacon, diced tomatoes, sliced green onions, and a dollop of sour cream.
