    Preparing the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes very thinly (about 1/16 inch thick). Rinse the potato slices in cold water to remove excess starch, then pat them dry with paper towels.

    Frying the Chips

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the potato slices in small batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.

    Making the Dill Sauce

    In a mixing bowl, combine sour cream, mayonnaise, chopped fresh dill, garlic powder, lemon juice, salt, and black pepper. Mix well until smooth and creamy.
