    In a large pot, heat the milk over medium heat until it reaches about 120°F (49°C). Stir occasionally to prevent scorching.

    Remove the pot from heat and stir in the white vinegar or lemon juice. Let it sit for about 5-10 minutes until curds form.

    Strain the Curds

    Line a colander with cheesecloth and pour the curds and whey into it. Allow the whey to drain for about 5-10 minutes.

    Rinse the Curds

    Rinse the curds under cold running water to remove any residual whey and acid. This also helps cool the curds.

    Add Salt and Cream

    Transfer the curds to a mixing bowl and add salt. If desired, stir in the cream for a richer texture. Mix gently.
