Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, combine the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Prepare the Sausage Gravy
In a skillet over medium heat, cook the sausage until browned and crumbly. Sprinkle the flour over the sausage and stir to combine. Gradually stir in the milk, cooking until thickened. Season with salt, black pepper, and red pepper flakes to taste.

Serve
Split the biscuits in half and ladle the sausage gravy over the top. Serve warm.
