Method

Preparing the Veal Chops

    Season the Veal Chops

    Pat the veal chops dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Chops

    In a large skillet over medium-high heat, add the olive oil. Once the oil is hot, add the seasoned veal chops and sear for about 4-5 minutes on each side until they are browned. Remove from the skillet and set aside.

Making the Sauce

    Sauté Garlic

    In the same skillet used for the veal, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes and Seasoning

    Pour in the canned crushed tomatoes, dried oregano, dried basil, and sugar. Stir to combine and bring to a simmer. Let it cook for about 10 minutes to thicken slightly.

Assembling and Cooking

    Assemble the Dish

    Preheat your oven to 375°F (190°C). In a baking dish, add a layer of the tomato sauce to cover the bottom. Place the seared veal chops on top of the sauce. Pour the remaining sauce over the chops.

    Add Cheese

    Sprinkle the shredded mozzarella cheese evenly over the veal chops. Tear the burrata cheese into pieces and distribute them on top of the mozzarella.

    Bake

    Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Serving the Dish

    Serve

    Remove the dish from the oven and let it rest for a few minutes before serving. Serve the veal chops hot, garnished with fresh basil if desired.
