Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes, or until frothy.

Mix Dry Ingredients

In a large mixing bowl, combine flour and salt. Mix well.

Combine Ingredients

Make a well in the center of the flour mixture. Add the activated yeast mixture and olive oil. Stir until a dough begins to form.

Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic.

Let It Rise

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Filling Preparation

Mix Filling Ingredients

In a bowl, combine ricotta cheese, cooked spinach, feta cheese, egg, nutmeg, and black pepper. Mix until well combined.

Assembly and Baking

Preheat Oven

Preheat the oven to 375°F (190°C).

Roll Out Dough

Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thickness.

Cut and Fill

Cut the dough into circles (about 4 inches in diameter). Place a spoonful of filling on one half of each circle and fold the other half over. Pinch the edges to seal.

Arrange on Baking Sheet

Place the filled dough on a greased baking sheet. Brush the tops with olive oil.

Sprinkle grated Parmesan cheese and chopped basil on top of each filled dough.
