Preparation

  1. 1

    Prep the Ingredients

Peel and devein the shrimp if not already done. Finely chop the onion, mince the garlic, and dice the tomatoes. Chop the fresh basil and set aside.

Cooking

  1. 2

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes or until the onion is translucent. Add the minced garlic and sauté for an additional minute until fragrant.

  2. 3

    Add Tomatoes and Seasonings

Stir in the diced tomatoes, salt, black pepper, and red pepper flakes. Cook for about 5 minutes until the tomatoes start to break down and release their juices.

  3. 4

    Cook the Shrimp

Add the shrimp to the skillet and cook for about 3-4 minutes, stirring occasionally until the shrimp turn pink and are cooked through.

  4. 5

    Finish the Dish

Remove the skillet from heat and stir in the chopped basil and lemon juice. Adjust seasoning if necessary.

Serving

  1. 6

    Serve

Serve the shrimp scampi warm, garnished with additional fresh basil if desired. This dish pairs well with crusty bread or over pasta.
